Here you can add the shrimps and cook them for about 30 seconds. Add 1 tablespoon of your prepared seasoning, combine and cook for approximately 2 minutes until the shrimps are nearly cooked through. Then please transfer them to a plate and set aside.

Then rinse and wipe clean your wok. Heat the pan again on high heat then add the remaining 2 tablespoons of vegetable oil. Then you can add the shallot, cooking them for another 1 minute until they are a little browned.

Then you can add the asparagus and pour in the remaining seasoning sauce you have prepared. Stir fry the asparagus until they are tender but slightly crunchy, for another 3 to 5 minutes.

Add the shrimps back to the wok and continue stir frying to reheat them. Shut off the heat from the stove and add the rice wine and stir a little bit to mix.

THE INGREDIENTS:

Two tablespoons of soy sauceOne tablespoon of waterTwo teaspoons of Southeast Asian fish sauce (Patis Puro)Four teaspoons of light brown sugarThree tablespoons of peanut oilThree cloves of garlic, choppedOne tablespoon of grated, peeled fresh gingerOne half to one teaspoon of red chile flakes or pepper flakesOne pound large shrimps, peeled and deveinedOne half medium red onion, cut into one inch dicesOne medium size yellow pepper, seeded and cut into one inch dicesOne jalapeno chile, thinly sliced into roundsTwo cups of cherry tomatoes, sliced into halvesThree fourth cup of torn fresh mint leavesTwo tablespoons lime juice, freshly squeezedSteam cook rice to go with the serving

THE PROCEDURE:
To prepare the sauce, get a small bowl and combine the soy sauce, the fish sauce and the sugar. Mix to combine and set aside.

Begin stir frying by heating a wok or a large skillet over medium high heat on your American stove.

Add the oil and swirl to coat the bottom of the pan. Season it with the garlic and the ginger and the chile flakes. Cook them until they are fragrant for about 30 seconds.

Then add the shrimps and stir fry continuously until they turn pink in color but still translucent in the middle for about two minutes.

Transfer the shrimps to a medium size bowl using a slotted spoon to drain the oil.

Reheat the wok and add the onion, the pepper and the chile to the skillet and stir fry until they are lightly browned for about two minutes.

Then return the shrimps to the pan and add the sauce mixture. Let it boil and then stir the sauce until it glazes the shrimps for about one minute.

Add the tomatoes and stir till the tomatoes coat with the sauce, just about fifteen minutes.
