Springtime pasta dish
Ingredients required for the pasta dish:
Penne - 400 gramsShredded kale - 200 gramsChopped bacon - 100 gramsFinely sliced red onion - 1, mediumSoft cheese - 100 gramsGrated parmesan for servingPreparation: In salted water, boil the pasta. In the last 2 minutes, add the kale and then drain it. Reserve a little of the cooking water. Meanwhile, in a non-stick pan, dry fry the bacon till it turns crispy. Take it off from the pan and then drain off the fat. Leave behind about one teaspoon of fat. Fry the onion gently in the fat for 3 minutes till it becomes soft. Into the pan, tip the kale and the cooked pasta. Then, stir in the cheese and the bacon. If the mixture is dry, then add a little bit of the pasta cooking water. Serve the dish in a bowl, scattered with grated parmesan, if you prefer.
Asparagus cream pasta
Ingredients:
Asparagus - 1 bunchDouble cream - 142 millilitrePeeled garlic cloves - 2Half shaved, half grated parmesan - 50 gramsTagliatelle - 250 gramsPreparation: Cut off the woody ends of the asparagus to prepare them. Then you should neatly cut the tips off from the stalks. Keep the stalks and the tips separately. In a saucepan, bring the garlic and cream to z boil. Remove it from the heat and take off the garlic and keep it aside. In the boiling salted water, cook the stalks for 5 minutes till they become tender. Drain them and then add them into the cream along with the grated parmesan. Whisk with a hand blender till it becomes smooth. According to the instructions on the pack, cook the pasta and then add the tips towards the last 2 minutes of the cooking time. Reheat the cream gently. Drain the pasta and then add it into a bowl along with the cream. Toss them till all is mixed well. Divide into pasta bowls. Before serving top it with parmesan.
