Two tablespoons light-brown sugar
One a half teaspoons Asian chili-garlic paste (such as Sriracha)
One tablespoon grated fresh ginger
One half cup cornstarch
One block of fourteen ounces firm tofu, please drain and cut them into one inch cubes
One tablespoon vegetable oil
Two large sweet red peppers, please remove the seeds and chop them
One cup baby carrots, please cut them diagonally into three equal parts
Four ounces snow peas, please trim them and cut them into halves diagonally
Six cups leaf spinach, please remove the stems
Eight ounces soba noodles, prepared separately according to the package directions

THE PROCEDURE FOR STIR FRYING:
Begin by mixing into a beautiful blend the soy sauce, sugar, chili-garlic paste, ginger and one tablespoon of the cornstarch. Stir until the cornstarch is fully dissolved in the mixture. Reserve this as your stir fry sauce that will provide magic to your veggie fry.

Then prepare the tofu by patting the cut tofu dry.

Place the remaining tablespoons of cornstarch in a pie plate or a flat large plate and coat the tofu with the starch on all sides.

Begin frying by heating oil in a large nonstick skillet over medium high heat on your American stove.

When heated through, transfer to a serving platter and serve hot with noodles.

My Recipe For Stir Fry Sauce

As a special treat to you all, here is fabulous recipe with the sauce that can blend with any type of meat plus your choice of vegetables. THE SEITAN STIR FRY WITH BLACK BEAN GARLIC SAUCE, is choice of so many diners in Asian Cuisines. Seitan, also called wheat gluten, is found in Asian specialty food stores. Black bean garlic sauce is sold in the international section of some supermarkets and is also found in Asian food stores.

THE INGREDIENTS: THE SAUCE:
two tablespoons of Chinese rice wine or sake
two tablespoons of black bean garlic sauce (such as Lee Kum Kee)
two teaspoons of cornstarch to thicken the sauce
THE OTHER INGREDIENTS:
two cups of boiling water
one ounce dried shiitake mushrooms
two tablespoons of canola oil
two cups of seitan, drained and thinly sliced
one tablespoon of garlic, chopped
one tablespoon of finely chopped peeled fresh ginger
four cups of cut green beans about one pound and cut into 2 inches
one fourth teaspoon salt
cilantro sprigs (optional)
4 cups of cooked brown rice

THE PROCEDURE:

Combine the sauce ingredients in a small mixing bowl and stir until they are smooth leaving no lumps. Then add the reserve one half cup soaking liquid from the mushroom. Stir well and set aside.

Before the sauce is prepared, combine two cups of boiling water and mushrooms in a bowl, then cover and let it stand for 20 minutes. Drain, but reserve one half cup soaking liquid. Rinse the mushrooms and drain them well. Discard the mushroom stems and thinly slice the mushroom cups.

To begin frying, heat your wok or a large skillet over medium high heat on your American stove. Add one tablespoon of canola oil and swirl to coat the pan.

Add the seitan to the pan and stir fry for two minutes till they are slightly browned. Place the seitan in a medium bowl.

Heat the remaining canola oil then add the garlic and the ginger. Stir fry for 30 seconds till aromatic.

Add the mushrooms and beans and cover the pan to cook for three minutes.

Add the black bean sauce mixture to the pan and cook them for another one minute till the sauce thickens.

Then return the seitan to the pan and cook it for another minute, but stir a few times.

Sprinkle with salt and pepper and serve while hot over the cooked brown rice.

Some garnish it with cilantro sprigs as they desire.
