When I visited Italy, I learnt about Tiramisu and I have never since been able to forget this rather wonderful dessert. Since most Italian dishes are very delicious and quite elaborate, at the end of such a meal, a worthwhile dessert is usually necessary. It is for this reason that Italians are actually very famous for their desserts.

Tiramisu is simply an Italian dessert that is created with ladyfingers that are dipped in coffee. These are then layered with egg yolk and mascarpone cheese having been whipped together. Cocoa is often used to add flavor to the dessert. The exact recipe for this dessert has been used to create several other cakes, puddings as well as desserts. It has also been slightly modified in many parts of the world to attain different tastes of the dessert.

The exact origin of this dessert is an issue that is very much under debate. While some people attribute it to an Italian chef from Venice, others say it originated in the city of Siena. There are some that say that confectioners came up with the recipe as a way to honor Cosimo III who was visiting the country at the time. As I learnt while in Italy, the word Tiramisu actually translates to 'make me happy' or 'pick me up', which according to some stories is a representative for the caffeine that is used as a part of the ingredients.

The exact origin of this dessert may be an issue of debate but the moment I tasted it for the first time, I knew for a fact that whoever had created it was a real genius. Tiramisu basically has a number of layers of biscuits that are soaked in coffee along with a mixture of sugar, eggs and cheese. To be able to prepare this biscuit layer, the Savoiardi biscuits are simply soaked in any strong coffee or espresso for that matter. To make the mascarpone cheese layer, usually some egg yolks and sugar are prepared first and then the cheese is added to the mixture. While I was learning how to prepare this dessert it occurred to me that when the layers are being added, they are then topped with some cocoa powder dusting. The reason for this is in the fact that this dessert is supposed to have a specific taste and anything short of this would not attain the intended purpose.

There are many different ways one can prepare Tiramisu and while some people prefer to have it sweet, others prefer it less sweet. There are a host of other cheese mixtures that I often use when preparing this dessert and some actually have raw eggs while others do not even have any eggs at all. Occasionally I add Marsala wine to the recipe. I have also learnt that there are other liquors that can be added to the mixture both in the case of the cheese mixture as well as the coffee mixture. Some of the liquors that can be added include Port, Brandy, Irish Cream and Madeira.

Here is a very popular and favorite recipe for stir fry that your family will love and enjoy. The spring vegetables and chicken breast strips stir fried with fresh ginger, the lime juice and a touch of soy sauce for a quick weeknight dinner. At home, we always enjoy making stir fries for dinner, the art of cooking veggies and protein in a wok and having dinner ready in just few minutes.

Many of us just use whatever vegetables we have on hand, a great way to clean up our refrigerators. You can just serve it over white cooked rice, quinoa, noodles or whatever. We always love the crunch of the sugar snap peas with the chicken, best crunching them raw while you are cooking.

As a super quick procedure, you can start first by using perhaps the Jaden's rice bran oil which is made from the outer layer of the rice kernel where all of the nutrients are found, which is very high in antioxidants and is perfectly suited for high heat wok cooking. But you can also use another type of oil that has a high smoke point such as sesame oil, canola or grape seed oil. This is below 200 calories, weight conscious people, this is gluten free, and low on carbohydrates, very clean that can be easily adapted for Paleo Diets.

As a Paleo note: For people you who are on a Paleo diet, you can substitute the cornstarch with arrowroot, and the rice oil with coconut oil, lastly the soy sauce with coconut liquid aminos. Here is the recipe for the SPRING STIR FRIED CHICKEN WITH SUGAR SNAP PEAS AND CARROTS. The original recipe serves 4 persons.

INGREDIENTS:

For the sauce:

1 tablespoon low sodium soy sauce (or Braggs Liquid Aminos or Tamari for GF)

1 tablespoon fresh lime juice

2 tablespoon water

1 teaspoon cornstarch

FOR THE STIR FRY:

1 pound boneless, skinless chicken breast, already sliced thin into strips

Salt to taste only

1 tablespoon rice bran oil, or canola

1 teaspoon fresh gingerroot, peeled and minced and sliced

2 teaspoon garlic, peeled and minced and chopped

1 cup sugar snap peas

1 cup of carrots, peeled and sliced into strips diagonally

Scallions to garnish

THE PROCEDURE:

In a small bowl, combine the soy sauce, the water, the lime juice, and the cornstarch. Stir them until they are smooth and the cornstarch is fully dissolved and set it aside.

Then season your chicken breast strips with salt.

Heat a large skillet or a wok over high heat. Wait until the wok is very hot, then add half of the oil and then add the chicken strips sizzling in your wok. Stir fry them occasionally until the chicken is cooked through and browned, for about 3 to 4 minutes. Remove the chicken from the wok with a slotted spoon into a plate and set aside. Reduce the heat to medium now.

Add the remaining oil into the wok. Then add the garlic and the ginger, and stir for 20 seconds. Then you can now add the sugar snap peas and the carrots or any other veggies that you may wish to add, and stir over medium high heat, until they are crisp-tender, for 3 to 4 minutes.

Return the chicken to the wok, and add the soy sauce-lime juice mixture. Mix them well and cook for 30 seconds to perhaps 1 minute. Serve immediately while they are hot.

This is a vegetarian dish and best serve with a side dish or fruits on season.

2. VEGETABLE CHINESE STIR FRY: Original recipe serves two persons.

INGREDIENTS:

2 cups broccoli flowerets1 sweet red pepper1 small zucchini1/2 cup celery, sliced thinly1/2 cup carrots, sliced thinly1 cup mung bean sprouts1/2 cup water chestnuts3 cloves garlic, minced1 medium scallion, white part minced and greens cut into 1/2 inch lengths2 tablespoons pe3anut oil2 teaspoons ginger freshly grated1 tablespoon Lee Kum Kee stir fry sauce (or your favorite mix)1 tablespoon Kikkoman stir fry sauce (or your favorite mix)1 cup water2 teaspoon cornstarch

PROCEDURE:

Cut all the vegetables into bite size chunks (carrots and celery should be sliced thinly). Set aside the broccoli. Plunge broccoli flowerets in hot water for 3 minutes and then drain in a colander.

Heat a large wok or a large skillet over medium high heat in your stove. Pour in the oil and swirl to coat over the pan. Then add all the vegetables except the bean sprouts. Stir for a few minutes more until the vegetables are crisp tender shortly about 4 to 5 minutes. Then you can add the bean sprouts and cook for another 2 minute more.

Then make a space in the center of the vegetables and add the minced garlic and ginger 0 let them cook in the center for 1 minute more. Mix the cornstarch and sauces into the water. Then add it on the center space of the pan and allow it to bubble until it starts to thicken. And then quickly stir fry to mix and coat the vegetables with the sauce. Continue stirring for another 10 to 15 seconds.

Serve while it is hot and best with steam cooked rice.

Tomato - 4 ( crushed)

Coriander leaves(Cilantro) - 2 handful

Mint leaves - 2 handful

Chilli powder - 4 tsp

Coriander powder - 2 tsp

Cumin powder - 2 tsp

Turmeric powder - 1/2 tsp

Curd - 1 cup

Salt - to taste

Ghee - 4 tsp

Cumin seeds - 2 tsp

Cloves - 10

Cinnamon stick - 4 pieces

Cardamom - 4 pods

Bay leaf - 2

Star anise - 2

Cashew nuts/ Almonds - 20

For fish

Oil - 6-8 tsp

Chilli powder - 1 tsp

Salt - 1 tsp

Turmeric powder - 1/2 tsp

Pepper powder - 1/2 tsp

Egg - 2

Preparation Method for Fish Biryani:

Wash and soak the rice for half an hour. Fry the rice in 1 tsp of ghee and keep aside.Cut the fish fillets into small pieces.Take a small bowl, beat the egg in it and mix the spices under 'For fish' with it (chilli powder, pepper powder, salt and turmeric powder).Coat the fish pieces with the above mixture and deep fry it. Keep it aside.Heat ghee in a deep pan and add cinnamon, cardamom, bay leaf, star anise and cloves.Add onions and fry till it becomes golden brown. Add the remaining ginger-garlic paste and green chillies and fry for 2-3 minutes, until the raw smell disappears.Add the tomato puree along with the chilli powder, coriander powder, cumin powder, turmeric powder and curd and fry till a nice spicy paste is formed.Add part of the chopped coriander leaves saving a part for garnishing. Add chopped mint leaves and fry for another minute.Add the nuts to this mixture.Put the above mixture with the rice into a rice cooker with 6 cups water and let it cook.Once the biriyani is done add the fried fish pieces to it. Gently toss everything without breaking the rice and keep covered for 10 minutes. Do this when the biriyani is still very hot so that the flavour of the fish will get blended with the rice.Garnish with cilantro and few fried fish pieces on top and serve with raita.

Then the delicious Fish Biryani is Ready.

But if you want added flavor, you can use additional tablespoons of this sauce plus grated ginger and sliced onions.

3. THE OERIENT EXPRESS STIR FRY SAUCE: This takes 10 minutes to prepare and makes four servings.
INGREDIENTS:
2/12 cup of chicken broth, fat free or low sodium type
1/2 cup corn starch
½ cup soy sauce, lite and low sodium type
½ cup light corn syrup
½ cup dry sherry
¼ cup cider vinegar
Two cloves of garlic, minced
Two teaspoon of grated fresh ginger
¼ teaspoon of ground red pepper or hot pepper flavor

THE PROCEDURE:
In a 1 ½ quart jar with tight fitting lid, combine the chicken broth, the cornstarch, the soy sauce, the corn syrup, the sherry, the vinegar, the garlic, the ginger and the red pepper. Shake them well. Can be refrigerated up to three weeks. But shake them well again before using in a stir fry. This recipe makes about four cups. In stir frying you can add the flavor according to the recipe of your stir fry. If you are only cooking for four servings, then you only need one half cup of the sauce or even less if you don't want it bubbling with the sauce.

Pour the puree into a hot ½ pint jars leaving ½ inch head space, and then seal and process in a boiling water bath for 10 minutes. Remove the jars from the bath and cool them off. Once cold off, you can store them in refrigerators and they will last until you finish them to the last drop.

2. THE CHINESE SZECHUAN STIR FRY SAUCE:

Ingredients:

one ½ teaspoon sesame oil

½ teaspoon minced fresh ginger

½ teaspoon minced garlic

1/3 cup chicken broth

2 whole anise stars

1 ½ teaspoon red wine vinegar

one tablespoon soy sauce

½ teaspoon salt

one teaspoon hoisin sauce

1/8 teaspoon Tabasco sauce

1/8 teaspoon red pepper flakes, crush them into bits

¼ teaspoon pepper

1/8 teaspoon 5 spice powder

one tablespoon of water with dissolved 2 teaspoon cornstarch

PROCEDURE:

Heat the oil into a small sauce pan. Add the ginger and garlic and saute for about 12 minute, until softened but not brown. In another bowl, please combine the remaining ingredients, saving the cornstarch mixture for later. Add them to the saucepan and bring to a simmer, covered, for about 10 minutes. Remove the star anise. Whisk in the cornstarch mixture and let it boil for another 1 to 2 minutes. Taste and add more Tabasco of desired. This is now ready for any stir fry cooking.

Tart - A One-of-a-Kind Treat

Ingredients required:

All-purpose flour 1 cup

Self-rising flour 1 cup

White sugar 1 ½ cups

Method of preparation

Leave some space in the middle of the mixture. After this is done, add the beaten egg and the water. Make sure that the ingredients are nicely mixed with each other. See to it that the dough is not kneaded too much. Make the dough into the shape of balls and nicely wrap them in plastic foil. Allow them to cool for 4 hours or for the whole night. Take a saucepan and mix pineapple and sugar. Heat them under average temperature. Then slowly bring down the heat level and stir it at regular intervals for 30 minutes until you get a thick mixture. Take it out of the heat and let it cool. Then, preheat the oven to at 400 degrees F. Roll the dough balls on a floured surface. Using cutters cut them into 24 round pieces. Place them on the cookie sheet. Fill the empty middle part of the dough with a spoonful of pineapple jam. Arrange the pastry over the jam beautifully. Make sure that the pastry is extended to the pastry shell.

Again, cut 24 more round pieces and cut the centre part in a way that it will take a ring shape. Wet the edges of the pastry and decorate the top of the shells using the ring shaped centre parts. Slightly rub the top of the pastry with the beaten egg. Put it inside the oven and bake it for 20-25 minutes. Then place it on a baking sheet and let it cool for 5 minutes. Then, put it on a wire rack and allow it to cool until it is properly set. Once set, you can serve it fresh.

Ingredients needed:

All-purpose flour 2 ½ cup

Butter 7-8 cups

Confectioner's sugar ¾ cup

Egg yolk 1

Cold water 1 ½ tablespoons

Superfine sugar ¾ cup

Minced lemon zest 2 tablespoons

Fresh lemon juice ¾ cup

Cream ½ cup

Instructions

In a food processor, process the combination of ingredients such as flour, butter, and confectioner's sugar. Continue processing until you get a breadcrumb-like mixture. Introduce the egg yolk and 1-2 teaspoons of cold water. Again, process it until the mixture takes the shape of dough. Make the dough mixture into a flat shape and cover it using a plastic wrap. Allow it to cool for 20 minutes.

Nicely roll the pastry onto a tart pan. Check whether there are any kinds of cracks in the rolled pastry. If you find one, fill it using the leftover pastry. Refrigerate it inside the freezer for 20 minutes. Then preheat the oven at the temperature of 350 degrees F. Line your pastry with foil and fill it using raw rice. Keep it in the preheated oven and let it bake for 15 minutes. Get rid of the foil and the raw rice. Then bake it again until the pastry assumes a light golden colour. Take a mixing bowl and mix up the ingerdients such as superfine sugar, eggs, lemon zest, lime juice and cream. Take extra care not to overbeat the mixture. Filter the mixture using a strainer. Then, place the pan on a baking sheet. Slowly introduce the lemon mixture onto the baked pastry crust. Bake it until it is properly set. First, the filling would be extremely fluid but it will set when it is cooled. Stay away from overcooking it since overcooking may result in cracks. When it is cooled and set, serve it.

A couple of months ago, I decided to buy in some popcorn for my regular Friday night movie with my friends. We'd always go for sweets but I decided I wanted a change. I hadn't had popcorn in a while as I only get it when at the cinema and we very rarely go. The popcorn went down a treat.

For weeks and weeks, we continued to purchase popcorn to go alongside the movie. A friend suggested that I could make a popcorn dish/snack so I decided to have a look on the internet to see what was out there. I was very surprised to see that there were thousands of recipes. Method of preparation

Whip it properly so that the ingredients are properly mixed. Then, include the flour in a gradual manner so as to make a thick mixture. Wrap the bowl with a cling film and keep it in a warm place. In the meantime, start preparing the topping. Include the sour cream and stir it well so as to get a smooth mixture. After that, take the lumpfish roe and separate it carefully. Cut the pickled herring and the smoked salmon using scissors. Wrap the topping carefully and let it cool. Then, start cooking the blinis. Preheat the oven to 150 degrees C. Include the egg white and whip it nicely until the ingredients are properly combined. Take a heavy skillet and heat it over moderate temperature. Then, include the melted butter into the pan and swirl it nicely so that the pans are coated well. Pour 2-3 tablespoons of the mixture. Cook it over average heat for 2 minutes until bubbles start forming on the surface of the blini. Let it set. Flip the side and cook the other side until it becomes golden brown. Keep the blinis in the oven so that it stays hot.

Take the leftover mixture and repeat the process. In order to serve, pour a teaspoon of sour cream into the center of each blin. Then, make a proper topping for the first 6 blinis using lumpfish roe. Top the rest using herring and the leftover smoked salmon. Transfer it into a serving plate and spread the chives over the blinis. Then, serve it along with lemon wedges.

Ingredients required for the pasta dish:

Penne - 400 gramsShredded kale - 200 gramsChopped bacon - 100 gramsFinely sliced red onion - 1, mediumSoft cheese - 100 gramsGrated parmesan for serving

Preparation: In salted water, boil the pasta. In the last 2 minutes, add the kale and then drain it. Reserve a little of the cooking water. Meanwhile, in a non-stick pan, dry fry the bacon till it turns crispy. Take it off from the pan and then drain off the fat. Leave behind about one teaspoon of fat. Fry the onion gently in the fat for 3 minutes till it becomes soft. Into the pan, tip the kale and the cooked pasta. Then, stir in the cheese and the bacon. If the mixture is dry, then add a little bit of the pasta cooking water. Serve the dish in a bowl, scattered with grated parmesan, if you prefer.

Asparagus cream pasta

Ingredients:

Asparagus - 1 bunchDouble cream - 142 millilitrePeeled garlic cloves - 2Half shaved, half grated parmesan - 50 gramsTagliatelle - 250 grams

Preparation: Cut off the woody ends of the asparagus to prepare them. Then you should neatly cut the tips off from the stalks. Keep the stalks and the tips separately. In a saucepan, bring the garlic and cream to z boil. Remove it from the heat and take off the garlic and keep it aside. In the boiling salted water, cook the stalks for 5 minutes till they become tender. Drain them and then add them into the cream along with the grated parmesan. Whisk with a hand blender till it becomes smooth. According to the instructions on the pack, cook the pasta and then add the tips towards the last 2 minutes of the cooking time. Reheat the cream gently. Drain the pasta and then add it into a bowl along with the cream. Toss them till all is mixed well. Divide into pasta bowls. Before serving top it with parmesan.

Tasty Popcorn Snack

A couple of months ago, I decided to buy in some popcorn for my regular Friday night movie with my friends. We'd always go for sweets but I decided I wanted a change. I hadn't had popcorn in a while as I only get it when at the cinema and we very rarely go. The popcorn went down a treat.

For weeks and weeks, we continued to purchase popcorn to go alongside the movie. A friend suggested that I could make a popcorn dish/snack so I decided to have a look on the internet to see what was out there. I was very surprised to see that there were thousands of recipes. Chocolate and Smarties Popcorn Balls

This is a great snack similar to the traditional chocolate Rice Crispies/Cornflake cakes. You can use as many grams as you wish, keep adding to it to make it perfect for you.

What do I need?

Some corn syrupSome butter or margarineA couple tablespoons of cocoa powder or a block of cooking chocolate (recommended 2 table spoons)A bag of Smarties/M&M'sA bag of popcornA plate

What do I need to do?

Put the chocolate/cocoa powder, syrup, butter/margarine and sugar into a pan and boil.Add as many popcorn as you wish into the mixture, until they are covered with chocolate/cocoa.Add the M&M's/Smarties into the mixture.Get a plate and shape them into balls and place into the fridge to cool.Eat and enjoy!
